Peruvian Quinoa Stew

Peruvian Vegatable Soup

  • Quarter Purple Pototoes (or heirloom, small potatoes)
  • Onion
  • Bell Pepper
  • grind Corriander, Cumin and Paprika
  • Aji Chile Paste

Saute Onion, Pepper and spices in a stock pot. Add 4 cups liquid (water or broth) and then add the potatoes and simmer for 15-20 minutes.

  • 1C Quinoa (white or red is best)

Add Quinoa and continue to simmer 15 minutes. Finish with

  • 1C Corn (frozen is fine)
  • Tomato
  • peas (frozen is fine)

Allow corn and peas to complete heat though. Garnish with diced Avocado, Lime and Cilantro

This is also good to add 2 cups of diced chicken if you want more protein in the dish (from soup to stew)

Could also garnish with Peruvian white cheese (or Cojita)
