Keto Individual Turkey Pot Pie

These delightful Mini Turkey Pot Pies are the perfect way to use leftover turkey! Each mini pie is loaded with turkey, vegetables and a creamy sauce for about 2 net carbs each!
Ingredients
Condensed Cream Soup - or make scratch Keto with 10oz Chicken Stock, poultry seasoning and 1TB butter with a bit of carbquick or high fiber thickener
Filling
1/4 cup diced carrots, 1/4 green peas, 1 1/2 cup chopped turkey (dark meat is best), 1/2 onion, clove garlic, seasoning
Dough
2 cups Mozzarella shredded (about 250 g)
2 ounces cream cheese
1 cup almond flour
1/2 tsp baking powder
1 egg beaten
Preheat over to 400
In 30 second bursts, melt the cheeses (about 4 pulses). Add the almond flour and baking powder and incorporate. This should
cool the mixture enough to add in the beaten egg without making scramble eggs. Divide in 2 and roll out one ball between
two silpat or wax paper sheets. Cut out 12 rounds and place in the bottom of a large muffing tin. Top with about 1/4 - 1/3 cup
of the filling and condensed soup mixture. Roll out 2nd ball and cut out tops for the pot pies. Bake for 20-21 minutes,
until nice and golden brown. Let cool for about 3-5 minutes and serve.
