Moroccan Fish in Spicy Sauce

Tabil is a spice blend of corriander, cumin and caraway seeds.

To make 1/2 cup, use 3 1/2 Tbl coriander seeds, 3 Tbl caraway and 2 Tbl of cumin seeds and blend in spice grinder. This will keep ~1 month in airtight container. Good spice mix for chicken, fish or even breakfast eggs.

Chraime is a Moroccan fish stew. It starts with a base of onions, red peppers and green chile/jalapeno. Dice each and fry in about 3 Tbl of olive oil for 7-8 minutes. Add 3/4 tsp salt to speed cooking.

Add 1/4 cup of tomato paste, 6 cloves garlic, 2 Tbl of Tabil, 2 Tbl Paprika, 1 Tbl Aleppo chile power and 1/2 Tbl black pepper. Cook until rawness of tomato paste is cooked. Then add 2 cups water and scrape up browned bits. Add 1 cup(10 oz) of cherry tomatoes, cover and simmer for 15 minutes.

Add white (cod/haddock) fish (~ 4-6 oz) to stew and cook 5-10 minutes. Garnish with fresh parsely or corriander and serve with slices of crusty bread. Could serve with a good mediterrean couscous too and lemon wedges.
